You like-a the Pizza? You think-a the Pizza is Gouda?
No, not good-a, Gouda- Gouda cheese.
Boy have I discovered some killer pizza! This stuff is to die for. I made it last night and I went back to the store this morning to get the ingredients to make it again, no kidding!!
This is a recipe you can play with, but I ask that you stick with some things from the recipe and try it that way before you tinker with it to make it your own.
#1 You MUST use Gouda cheese.
#2 Please use red onion, and red onion only, and even if you don't like onion, use it the first time.
#3 Cilantro!!! It's a must
It is those three things that make the pizza. Well, the barbecue also, it wouldn't be the same without the barbecue chicken AND those three things. But you can use whatever pizza crust you like. You can make your own from scratch, you can get one like Boboli http://www.boboli.com/ , or the refrigerated roll out kind like Pillsbury. (last night I used an off brand of Boboli)
Use as much cheese as you like on your pizza. Use the barbecue sauce your family enjoys, although may I recommend Sweet Baby Ray's http://www.sweetbabyrays.com/, if you have that in your area. (and boy howdy, I hope you do, cause the sauce is boss!)
Very Gouda BBQ Pizza
1/2 pound chicken (I used tenders) barbecue sauce , as much as desired or about 3/4 cup Pizza crust shredded Gouda, as much as you like or about 3/4 cup shredded mozzarella, as much as you like or about 1 cup shredded Parmesan, as much as you like or about 1/2 cup 1/2 medium red onion, thinly sliced (give or take) about 3 tablespoons chopped fresh cilantro leaves
Preheat oven to 400 degrees F (or however your crust needs to be baked)
Slow cook chicken breast tenders in oven at about 275 for about an hour. After cooled dice chicken to yield a little over 1 cup. In a small bowl, toss chicken with about 2 tablespoons barbecue sauce. Set aside.
Prepare pizza crust you are using as needed. Spread barbecue sauce evenly over pizza dough, as much sauce as you like on your pizza. Sprinkle Gouda, mozzarella, Parmesan, onions, and chicken over top. Bake for about 20 minutes or until cheese bubbles and just starts to brown. Sprinkle with chopped cilantro.
