Biscotti all'Arancio




Or in English- Orange Chocolate Cookies.

I decided that I wanted an Orange and Chocolate cookie for my sisters wedding reception and after only a couple of tries, I dare say that I found the one. These are great!

Chocolate Orange Cookies
for the dough
2 sticks unsalted butter 1/2 cup sugar 1 teaspoon vanilla 1 teaspoon orange extract 1 teaspoon grated orange rind 2 egg yolks 2 1/2 cups flour, sifted for the filling orange marmalade for the chocolate topping melted chocolate
In a mixer fitted with a spatula beat together the butter and sugar until soft. Add the vanilla, orange extract, grated rind and the egg yolks. Continue mixing until forms smooth dough. Add the flour and mix until fully incorporated. Remove the dough from the mixer. Transfer the dough to a plastic wrap and place in the refrigerator for about one hour. Preheat oven 325 F. Remove the dough from the refrigerator and cut it in 4 pieces. Place one piece on a work board and return the rest to the refrigerator. Flatten the dough to about 3/16 inch thick. Cut the dough using a cookie cutter with a heart shape (I went mega mini for these cookies). Transfer the cookies to a pan and repeat the step with the remaining dough. Bake the cookies for about 20 minutes, or until light golden, or if you use a mini cutter such as I, about 15 minutes. Warm about 1/2 cup marmalade in microwave for about 30 second and spread on cookie to make a sandwhich. Drizzle with chocolate when complete.
