My FAVE- Pumpkin Cookies



I was deprived as a child. It was horrible. I mean, I had loving parents who gave me all the loving care and attention that children need.....but they didn't give me Pumpkin Cookies. When I discovered these after my trek out west about 18 years ago I made a promise to myself and my future children that they wouldn't EVER be deprived as I was.


These cookies are GREAT, and if you haven't had them before, I strongly advise you to try them. And I promise that you too will wonder where Pumpkin Cookies have been all of your life. These cookies are moist and have the perfect amount of pumpkin spice and the perfect pumpkin to chocolate ratio. (Hey, pumpkin to chocolate ratio is VERY important)

FYI- Semi sweet chocolate is a must, milk chocolate just won't cut it in this recipe.

Chocolate Chip Pumpkin Cookies

2 C flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp nutmeg
1 stick of butter, softened
1 C brown sugar
1 egg
1 C canned pumpkin
1 tsp vanilla
1 C semi sweet chocolate chips

Preheat oven to 375. Line cookie sheet with parchment paper (or spray).
Sift dry ingredients in bowl.
In seperate bowl beat butter, brown sugar, and egg. Add vanilla. Alternate adding dry ingredient and pumpkin until well blended, but not over beaten.
Stir chocolate chips in by hand.
Bake 8-10 minutes.

I made these Friday to serve some friends who were coming over...and everyone LOVED them! The biggest compliment is from my almost 11 yo picky daughter who raved about them! *just now she is eating one and said "do these have pumpkin in them? i usually don't like Pumpkin". so now she have discovered something she really likes but didn't' know she did! thanks for sharing the recipe!

ps...I was a little confused at the last step "stir chocolate chips in by hand"....for a minute I wondered if i had to use my hands to mix it together! ha ha
