Last week I was honored to have my parents over for Brinner. (we all know that's breakfast for dinner, right?)

I made Sweet Potato Hash Browns, and my ma asked for the recipe, so here goes-

Sweet Potato Hash Browns
1 Pound of sweet potatoes
1 green bell pepper
1 onion (I used Vidalia)
2 Tbs. olive oil
1/2 tsp. cumin
salt and pepper to taste

Preheat oven to 400.
.
Cube sweet potatoes, bell pepper and onion to about 1/2 inch size. Toss in olive oil and add seasoning. Place in sprayed pan and cook for 20 minutes. Turn hash browns and put back in the over for 20 more minutes.
